Fixing USB Serial Missing with Intel Edison

Restart your board with a serial connection engaged (PuTTy or Screen)
Hit "Enter" or any key during the boot-up process to access the "boot>" prompt
Enter the following command: $boot> run ota-update
Should restart the board and enable USB serial again
