We are currently using vite 4.x in the various @sdeverywhere packages. There are some security vulnerabilities reported in the 4.4.9 version we are using, but at this point it makes sense to try to upgrade all to use the latest 5.x so that we're more up to date.

We updated from 3.x to 4.x a year ago in #351, so we should do a similar upgrade now and look out for any incompatibilities.
