[WIP] Release a major version with multiple large breaking changes

This PR will be used for ongoing work on the library to merge multiple PRs introducing large breaking changes to the library

Done:

• Properly re-architecture the library to handle various source abstractions (Properly re-architecture the library to handle various source abstractions #1275)
• Fix usage of INestedOptions to properly use the parent property's JSON name (Rewrite parameter encoding logic #1276)
• Fix naming for SourceTransactionCanceled event type (Rename event to match type name and add a related one. #1282)
• Handle DateTimes directly in the encoder ( Handle DateTimes directly in the encoder #1283)
• Remove StripeDeleted and add Deleted to relevant resources instead (Remove StripeDeleted entirely. #1284)
• Rename properties starting with a lower case letter (Rename two properties that start with a lower case letter #1285)
• Rename all files and classes to remove the Stripe prefix (Remove Stripe prefix on all API classes #1252)
• Fix services (Fix ScheduledQueryRun naming #1286, Fix signatures in InvoiceService and RefundService #1287, Fix FileUploadService #1288, BalanceTransactionService #1291)

TODO:

• Use interfaces for common methods on services (Service interfaces #1269)
• Make all value types in options classes nullable
