  • Serves: 4 servings
  • Prep Time: 5-10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes

Ingredients

  • 400g Maris Piper potato, optionally peeled and chopped in chunks
  • 600ml water, salted
  • 2 tsp salt
  • 1 tsp pepper
  • 30g butter
  • 60ml milk
  • spring onion, optional

Method

  1. Place chopped potatoes in a medium pot, add water and cook on high heat on the stove. When they start boiling, cook for 5 minutes.
  2. Reduce heat to medium-low and cook for another 5 minutes.
  3. Remove pot from the stove and discard the water. Add butter, milk, salt and black pepper and the potatoes back into the pan and use a potato masher.
  4. Gradually add more milk and continue to mash until you have creamy and buttery texture.
  5. Serve warm.

Notes

  1. For best results, peel potatoes.

Ingredients:

  • 1.13kg Yukon Gold potatoes, peeled and chopped in chunks
  • 625ml water
  • 1.5 tsp salt
  • 0.5 tsp pepper
  • 170.25g butter
  • 244ml milk
  • fresh parsley, optional

Method:

  1. Place chopped potatoes in a medium pot, add water and cook on high heat on the stove. When they start boiling, cook for 5 minutes.
  2. Reduce heat to medium-low and cook for another 20 minutes.
  3. Remove pot from the stove and discard the water. Add butter, milk, salt and black pepper to the potatoes and mix with the mixer on high speed until potatoes are creamy.
  4. Serve warm.

Serves: 6 servings

Ingredients:

  • 2 ½ pounds potatoes peeled and cubed
  • 1/4 cup butter
  • 1/4 cup milk
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 teaspoons garlic powder
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper

Gravy

  • 1/2 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups water
  • 1 cup milk
  • 3 chicken bullion cubes
  • 1/4 teaspoon pepper

Method:

  1. For Potatoes: Boil potatoes in a large pot of salted water until fork tender. Drain water.
  2. Place potatoes back in pot. Mash with a potato masher or electric hand-mixer until smooth and creamy. Stir in butter, milk and sour cream. Add Parmesan cheese, garlic powder, salt and pepper. Mix until well combined.
  3. For Gravy: Melt butter in a medium sauce pan over medium heat. Add flour and whisk together for about one minute or until golden-brown. Whisk in water, milk, crushed bullion cubes and pepper. Stir constantly until mixture comes to a boil. Reduce heat to low and continue to stir until thickened.
  4. Serve over mashed potatoes. Enjoy!

Serves: 6 servings

Ingredients:

  • 3 1/2 lbs potatoes (1.5kg) washed, peeled then cut into quarters
  • 1/2 tsp sea salt + more for seasoning
  • 1/2 tsp cracked black pepper
  • 1/4 cup butter (60g) at room temperature + more for serving
  • 1/4 cup milk (50ml)
  • 2/3 heaped cup mature(sharp) cheddar cheese (80g)
  • 1/3 cup vegetarian parmesan cheese (30g)
  • 2 heaped tbsp cream cheese
  • 1 tbsp of finely chopped flat-leaf parsley (optional)

Method:

  1. Add the chopped potatoes to a large saucepan and cover with cold water. Add a good pinch of salt.
  2. Bring the pan to the boil then reduce to a medium simmer and half cover with a lid.
  3. Cook until the potatoes are tender, about 15 minutes, then drain the potatoes in a colander and return them to the pan.
  4. Cover the potatoes then let them steam over a medium heat for 2 minutes. Give the pan a good shake.
  5. Meanwhile, heat the milk in a small saucepan.
  6. Using a potato masher mash the potatoes until they are smooth.
  7. Add the butter and half the milk to the potatoes and stir vigourously. Add more of the milk now, you may not need to add all the milk, the potatoes should be creamy, not watery.
  8. Stir in the cheese and keep stirring until the cheese has been incorporated into the mash.
  9. Season now with salt and black pepper to your own taste.
  10. Serve immediately with a pat of butter and the chopped parsley if using.

Serves: 8 servings

Ingredients:

  • 3 pounds yukon gold potatoes, peeled and diced
  • 1–2 tablespoons chicken stock base
  • 3/4 cup half and half
  • 1/2 cup whole milk
  • 1/4 cup butter
  • 4oz cream cheese
  • 1/2 teaspoon garlic powder

Method:

  1. Place your potatoes in a pot and cover with water about an inch or two above the potatoes
  2. Add your chicken stock base and stir together
  3. Bring to a boil, and reduce to a simmer
  4. Simmer your potatoes until they are cooked through (tender when you pierce them with a knife)
  5. Cook time will depend on the size of chunks you cut your potatoes into – the smaller they are, the quicker they will cook!
  6. When your potatoes are done, drain them using a colander and transfer to a large bowl
  7. Add your half and half, whole milk, butter, cream cheese, and garlic powder
  8. Mash everything together until thoroughly combined and smooth
  9. Now for the salt…potatoes need a LOT of salt to be flavorful. Don’t be afraid of it…just keep adding it until the potatoes have good flavor. Without enough salt, you can’t taste the other flavors in the dish.
  10. So – that being said – season to taste with salt and pepper and serve!
