Jaeger Operator version from upstream image is not set #1964

Describe the bug
Similar situation described in #1923 but for the published images.

To Reproduce
Steps to reproduce the behavior:

Run the version command from the latest Jaeger Operator container image:

{"jaeger-operator":"","build-date":"2022-06-21T19:37:55Z","jaeger-version":"1.35.2","go-version":"go1.17.11"}

Expected behavior
The version should be set:

docker run -ti jaegertracing/jaeger-operator:1.35.0 version
{"jaeger-operator":"1.35.0","build-date":"2022-06-21T19:37:55Z","jaeger-version":"1.35.2","go-version":"go1.17.11"}
