Attempt at fixing the macOS CI.

Fixes #384

Checklist:

This reverts commit 204014a.

Seems like this is needed after all, otherwise macOS is struggling to
find a local HDF5.

Ok, looks like there were three issues here:

  1. Needed to revert Fixing to minimum version of pytables to try to remove illegal instruction error #379, which restricted tables to version 3.8.0. So I guess whichever issues required this have been resolved by now.
  2. Needed to update to miniconda@v3.
  3. Needed to ensure that macOS has a local version of HDF5 installed.

* Reapply "attempt at fixing macOS CI by brew installing hdf5"

This reverts commit 204014a.

Seems like this is needed after all, otherwise macOS is struggling to
