chore: Update dev dependencies

This PR updates the react-select dependency to the latest version. I realized after starting it that #357 did the same thing, but I also updated some of the other dev dependencies, so I'll still push this up.

I also removed the extra dependency of react-select from the demo package.json, as it didn't need to be there (just doing an npm install in the demo folder after updating the parent package's dependency would do the trick).

Finally, it adds the chakra2 tag to the release config, so that future releases aren't marked as latest.
