Closing this one. I've added this to PR #211 tested and verified + amended a few things. Although there are things that will benefit of being changed (I'll reach you out Rob), in a couple of weeks I'm planning to replace this section with Spot Invaders to demonstrate the same in a fun way. |

Description of changes:
Added section for using FIS to run a Spot interruption experiment on the EKS/Karpenter workshop. Section was added at the end, so moved the "what we have learned" portion to the end of this new section and updated the cleanup section to remove an artifact created for the FIS experiment.
