The sharp library used at the moment has caused problems in the pas before, specially when it comes to cross OS support.
Having to instal things separately like libjpeg etc is a pain. Squoosh now has a node library that we should consider exploring and adopting

Is libSquoosh better than sharp in terms of performance?
In certain circumstances maybe, but the performance boost - if any exists - is negligible. The reason we're looking to swap here is to deal with issues we've had getting this working reliably on different platforms.
