Use color control for preselected value in color swatches

Description

Minor change to use color control for value property instead of raw string value.
Not sure why all color swatches were reduced to only three colors. I think the larger amount of swatches showed how it work with many colors and wrap on several lines depending on the container width.

Ideally the stories should cover each state of a component and I think some mock data close to real use-cases is preferable.
