Add ModelsBuilder unit tests to cover Inheritance and Composition

Prerequisites

• I have added steps to test this contribution in the description below

While fixing #11118 I noticed that compositions and inherited doctypes weren't covered by the unit tests.
I've added them in, and also added names to all the types so test models more accurately reflect real-world generated models.
