What was changed:
Upgrades cypress to the latest version v6.8.0.
Also upgrades Browserslist browser versions to the latest 2 versions relatively
Why?
CICD is currently failing after recent dependabot upgrades (though no confirmation that cypress v5.0.0 is related to that). Between v5.0.0 and v6.8.0 there have been a number of bugs fixed and stability improvements (also some api changes though it doesn't affect our tests).
