Update docker image for MacM1

Description

This PR makes changes to etc/docker/Dockerfile_MacM1:

• Uses the same base image as in etc/docker/Dockerfile, minimising discrepancies and possible conflicts
• The only difference now between images is the source of the conda installer which is now https://repo.anaconda.com/miniconda/Miniconda3-latest-Linux-aarch64.sh

The instructions on etc/docker/README.md should be the same except specifying the Dockerfile for the right architecture.

How was this tested?

• The image was built on Mac M1 with MacOS Sequoia 15.0.1 and Docker version 27.3.1, build ce1223035a.
• The container was run using Zeek data
• The output data was compared to the AIP run on Linux using the same input data.
