Update SparkApplication object definitions to the latest schema version.

Please keep in mind that the demos are reproduce, so they all run on 23.7.
Merging this right now would break the demos. The normal flow is to bump the demos once 23.11 is tagged during the testing process of 23.11

I didn't know. This is not good. Sounds like we want to pin down demo versions
