Python version used for hatch build

First off, thanks for a great alternative to building/publishing Python packages!

I'm aware of the special build env, and that it's basically what gets used by hatch to handle the command hatch build. It doesn't behave the way that other environments do, such as respecting python = "3.10" under [tool.hatch.envs.build].

I'm also aware of [tool.hatch.build.targets.*], where there are a number of options available, but python version doesn't appear to be in that list.

Is it possible to specify the python version to build with? When I use hatch build it runs on the latest no matter what.
