Closes #305

This is just a plain rename (search/replace) to add the --pst- prefix to all our CSS variables (we should also do something similar with our class names, but that's a separate issue)

(it's certainly possible I made a mistake here)

Everything is fine. I did something wrong when I tried to resolve conflicts in a downstream branch (I add a version switcher in the navbar). Now it works~
