fix: add remaining forks to mapper and rpc-compat suite #10

Previously there were forks (notably the merge at block 0) that were not activated, because the rpc-compat suite did not define environment variables for those forks, causing our mapper.jq to remove those forks from the generated genesis.json.

This adds all remaining forks to our mapper.jq and as environment variables in the rpc-compat suite.

Also sets the log level to info for the import and node step for the reth client script.
