Is your feature request related to a problem? Please describe

We are currently running only a few projects with JDK-23, however it would be useful to support JDK-23 by OpenSearch core.

Describe the solution you'd like

Support JDK-23 (build time and runtime) so we could run benchmarks with latest ZGC.

Additional context

Should we bundle OpenSearch core with JDK-23 is an open question, see please https://bugs.openjdk.org/browse/JDK-8341127 (openjdk/jdk#21283)

3.0.0 (main) switched to JDK-23, 2.x stays on JDK-21 for now
