Update OpenAPI Generator version to https://github.com/OpenAPITools/openapi-generator/releases/tag/v7.10.0
This change doesn't clash with the added template file in #155 as it hasn't been touched for a long time.
NB: we'll need to update also to next generator version (#157, already tested) for being able to deliver new client libraries due to this bug: OpenAPITools/openapi-generator#20272
NB2: this change is supposed to be not backward compatible, therefore needs to be delivered in a major release.
