chore(repo): update nightly node versions

Current

Node v16 expires soon and v19 has been dead for a while.

Meanwhile, we don't test for v20.

Expected

Nightly should run on v18 and v20

I think if something breaks in 18... Hopefully it's caught in 16 or 20 🤞

We can replace 19 with 20, but leave 16. I'll make that change
