Bump stable Version to 25

Hello,

since 17th November the rollout of 25.0.1 is set to 100% in this commit: update-server-commit
So it would make sense to bump the stable tag to this version as well.

I assume that nextcloud-docker will ignore the current stable-release 25.0.1 and wait until 25.0.2 is rolled out 100%.

Is this correct?

If so, should this issue remain open for this time as a remark for why we are currently waiting for a docker-v25-stable-release or should it be closed since v25.0.2 has not even been started to release as the new stable server version?

25.0.2 is planned for this week so it doesn't really matter I guess.
