So, it's installing pyarrow==17.0.0 but I'm checking for pyarrow==11.0.0
This problem was also commented on this other PR

I would say that achieving both would be ideal to unblock any other contribution:

• One one side it is what you implemented
• On the other, you can integrate the changes from fix: pandas and pyarrow were raising for repeated aggregations involving the same root name and the same aggregation function #1613 in the .github/workflows/extremes.yml file
