My favorite Sphinx theme that I've come across so far is PyData. The Jupyter documentation and Pandas documentation, for example, both use PyData.

Here's what one of the pages of our documentation website looks like with the PyData theme active and at least partially configured, in "light mode" (as opposed to "dark mode").
