chore(e2e): replace viem/anvil with prool (wip)

Replaced the deprecated viem/anvil with prool in an attempt to fix e2e tests in #3287. Turns out the e2e test issue was caused by something else, and prool seems to require node > 18 to work (and even then requires a polyfill for Promise.withResolvers, so I don't think we should merge this right now, but putting it here for future reference.
