bump coredns version to 1.11.1

I'm waiting for a kubernetes-sigs member to verify that this patch is reasonable to test. If it is, they should reply with /ok-to-test on its own line. We can only mayne bump to this version if it's supported by kubernetes 1.29 and it's not applicable for the current versions in Kubespray. See: https://github.com/coredns/deployment/blob/master/kubernetes/CoreDNS-k8s_version.md

Pending the kubespray supporting the kube 1.19.
