fix: update nginx ssl ciphers to get TLSv1.2 working again

So far we mostly configured the servers according to https://ssl-config.mozilla.org/#server=nginx&version=1.18.0&config=intermediate&openssl=3.0.2&ocsp=false&guideline=5.7. Not entirely sure about the differences though. We could stick to this to be in line with our other services. What do you think?
