What this PR does / why we need it:
This PRs fixes some parts of the documentation about the otlp ingestion endpoints.
The original documentation created on PR #11026 gives a great explanation and how to use it, but it was missing the complete endpoint and it was driving me crazy that I was receiving a 404 when trying to push data from otel collector to loki.
So I found this #12709 and things were clearer and after using this endpoint on my otel collector exporter, it worked like it was supposed to.
I also took the liberty to add in the HTTP API Reference documentation, since it's a good place to also check for all endpoints
