The observability overview Hosts table will timeout if you select a wide time range (such as 3 months) from the datepicker. This is likely because the date histogram is using a 1m fixed interval.

Below between the Alerts and Services components it says "loading" for a long time before timing out:

## Summary

This PR fixes #145030 by using the `options.bucketSize` in the
`date_histogram` for the Overview query.
