Stack monitoring - Enterprise search 8.1 compatibility

This ticket tracks the action items necessary to make Enterprise search module compliant with Stack monitoring UI 8.1.

• Stack Monitoring: Add Enterprise Search monitoring index templates elasticsearch#82743
• Metricbeat enterprise search module: add xpack.enabled support beats#29871
• Enterprise Search: Add Metricbeat 8.x version as sidecar (currently using 7.16) and configure xpack.enabled: true in the Enterprise Search Metricbeat module configuration, so metrics are shipped to .monitoring-ent-search-* indices

Stack support has been added, as the pending PRs have been merged.

Enterprise Search must add Metricbeat 8.x version that includes these changes, tracked here: https://github.com/elastic/enterprise-search-team/issues/1174

I think the relevant PRs have all landed for this work now, so we are no longer blocked. See:

As it stands now, Enterprise Search is compatible with 8.1 Stack Monitoring, even if that work is not yet done. We're planning to switch to Metricbeat 8.x in 8.2.
