chore: change organisation to Catena-X e.V. #508

Description

With the end of the consortia, Catena-X e.V. wants to continue to use these templates. This PR introduces changes to the organization in the following templates:

  • support-invite-member-to-github-org.md
  • support-onboard-a-new-product.md

Please ensure to do as many of the following checks as possible, before asking for committer review:

Hi @ds-lcapellino,

I would not merge this until th eend of the consortia phase.
Also something to consider: I personally would only keep the support process for environment onboarding in eclipse-tractusx, if it is open for everyone. AFAIK, only association members will be allowed on new envs and therefore I would tend to set up the onboarding process in the association GitHub org
