Version is currenty set in https://github.com/eclipse-tractusx/item-relationship-service/blob/main/irs-api/src/main/java/org/eclipse/tractusx/irs/IrsApplication.java API_VERSION

Acceptance Criteria

API_VERSION is automatically updated for the latest release
