[5.x]: CKEditor fields not displayed in elements-index

What happened?

Description

When adding a CKEditor field to the elements-index view of a certain entry the value get displayed as [] instead of the actual value of the field

Steps to reproduce

1. Install the CKEditor plugin for Craft 5
2. Create a new field with the standard configuration
3. Add the field to a entry type
4. Make sure the field is check in view options
5. Add a new entry and add some text to the field
6. Go back to the entries overview and see the []

Expected behavior

Expected the actual value of the field instead of a placeholder []
