Looks reasonable to me. I looked over https://github.com/chef/chef-server/blob/master/doc/FrequentTasks.md, and it looks like you hit all the bases.

Description
A new stable version of Chef Infra Client 15 has been released.
This PR brings all versions of Chef Infra Client into alignment following the temporary fix to the build pipelines in PR #1774
