@jjallaire I have added an option to install RStudio Server OSE for now. See commit 993a5aa. I am still looking forward to an answer from @rstudio on whether or not I am permitted to include RStudio Server OSE as an alternative IDE to code-server in our pre-built JupyterLab R docker images.
