EKS 1.16 is out : https://aws.amazon.com/about-aws/whats-new/2020/04/amazon-eks-now-supports-kubernetes-version-1-16/

All the content and setup in the EKS workshop should be adapted. There are however no apparent changes in eksctl yet so things may need to wait a bit for the toolset to be consistent and avoid steps.
