Update E2E Testing to use Pod Identity instead of IRSA

What problem are you trying to solve?

• Related [Feat] Add/update controller IAM policy recommendation for Pod Identity session tags #5195
• As karpenter is switching to recommend the setup of Karpenter using Pod Identity . The E2E tests should be updated to reflect this change. Karpenter should test the recommend path.
• PR for updating docs: docs: Update Create Cluster with Pod Identity #5259
