docs(roadmap): update roadmap themes

Summary

This PR updates roadmap page with the latest initiatives we're currently working on as well as future themes identified through customer interviews.

• Cleanup intro
• Add Sensitive Data Masking
• Add Event Handler experience revamp
• Update Observability providers
• Add Authentication (SigV4)
• Add Operational Metrics opt-in idea
• Add V3 thinking (no ETA)
• Workflow to auto-cut issue to update roadmap every other month (schedule: 0 0 1 */2 *) - will use Slack reminder for now or send in a separate issue/PR

Unrelated changes

• Fix docs warning (internal links)
• Enable task lists to improve reading experience in roadmap major updates
