chore: add seo redirects for Docs v@

Porting over as many of the old routes we had in DocZ over to Docusaurus.

@hughhhh @srinify I see we have both a package-lock.json and yarn.lock in docs-v2/. I checked here that apparently node 14 and yarn 1.5 are required: https://docusaurus.io/docs/installation . Maybe we should add

to package.json and remove package-lock.json, as I assume we don't need it?
