Add macos-latest as platform for Github actions

Change

• adapts GH actions config in maven.yml adding macos-latest as platform
• moves Java ea version to '23-ea' as experimental target release

Not sure how reliable that is... I normally enable macos-latest as an optional step, as many times it is ultra slow or fails for no good reason 😅
