Bug description

There's been a number of changes to the doc tooling on the Quarkus main branch. We encounter a compilation error in UpdateExtensionDocPageMojo:

UpdateExtensionDocPageMojo.java:[599,42] incompatible types: io.quarkus.annotation.processor.documentation.config.model.ConfigProperty.PropertyPath cannot be converted to java.lang.String

After my amateurish attempts at fixing that, the doc generation fails on various extensions due to YAML parsing issues.

I'm going to force skipping of the plugin execution until we have a fix.

Fixed in #6684 and with supplementary commit on quarkus-main.
