After #522 and #523 I've realised that the composer file included with this repo specifies WordPress 6.0.* only, it didn't have the fixes included in WordPress 6.1 and unit tests have been running against an outdated version of WordPress.
This PR simply updates composer dependencies, and switches from
^6.0
to~6.0
for WordPress, causing it to install all6.x.y
releases.
