openjdk images are marked as deprecated and the actual image tomcat:9-jdk11-openjdk is several months old.
I think we should simply replace this with tomcat:9-jdk11 – there might be some differences since this is based on Ubuntu, yet hopefully to be neglected in practice.

I'm happy to do the update but #42 is blocking my local tests.
