Once support is added for SamplerV2 (#488) and once Qiskit Aer supports SamplerV2 and EstimatorV2 (Qiskit/qiskit-aer#2078), we should update our uses of the primitives in the documentation and tests to use the v2 version of the primitives. (Of course, we should keep some tests of reconstruction using the v1 Sampler as long as that exists.)

I realized it is unlikely we will do both tests and docs at the same time, so I have split this into two issues.
