Refresh conda-lock.yml file

Include newly added dependencies - gcsfs, zarr, pre-commit, sphinx_gmt and sphinxcontrib-youtube that were added in #15 and #16.

This should fix the failing deployment build at https://github.com/GenericMappingTools/agu24workshop/actions/runs/12110479770/job/33760933148#step:4:36
