Nutrition has a very flexible config file to allow different styles of play.
On first start, a new directory will be created at the path /config/nutrition. This directory contains the primary configuration file nutrition.cfg, and two subdirectories: /nutrients and /effects.
These two subdirectories contain .json files. Their format is covered on their respective pages:
You can delete nutrition.cfg, the /nutrients directory, or the /effects directory to regenerate those files on next game launch.
