Description

Add documentation to describe how supplemental fields are added to a MM configuration. See
CONFIG.md on the current development branch).
Also include description of how the filters and their defaults are set.

@ColmDC Is this about documenting tasks like the work being done in #237?
Perhaps this could be an acceptance criteria of that issue so that the documentation is being done while it is fresh in someones mind?
