refactor: use type schemes in extension definitions wherever possible #678

Closes #658

As a drive by improve extensions test coverage as I went.

Definition can be a bit unintuitive, should improve after #676 is done.

Yeah, so #676 bites harder than I expected here; without that, this would just be a PolyFuncType and verging on inlinable. (Shame we can't make it const!)

#676 pending of course, but in the meantime, I suspect you don't actually need this one? (You don't define any types in this extension so you're not referring to them here)
