Customizer does not display logo when Gutenberg is activated

So far, we could only reproduce this on https://lafabriquedesadieux.com/

Steps to reproduce the behavior

1. Deactivate these plugins on site - creative-mail-by-constant-contact crowdsignal-forms facebook-for-woocommerce google-site-kit kliken-marketing-for-google layout-grid mailchimp-for-woocommerce simple-icons svg-vector-icon-plugin woocommerce-gateway-stripe woocommerce-services wordpress-seo
2. Deactivate Gutenberg (10.9.0)
3. Load Customizer
4. Logo appears
5. Activate Gutenberg
6. Load Customizer
7. Logo does not appear

What I expected to happen

Logo to appear when Gutenberg is activated too

Is this specific to the applied theme? Which one?

Reproduced on Fortune, TwentyTwentyOne, Karuna

What has been done so far

p9F6qB-70P-p2 - we tried the AT fix to update theme_mods_fortune

Removing CSS also saves.
It is only the site logo that though, saved, does not appear when Gutenberg is active
