Apologies for another pull request relating to this, but I made a few changes to the Ubuntu CI that does the following:

Changes the accented e in the PokeFinder appimage file name to a regular e (this makes it play nice with certain terminals in case someone wants to launch the file from there)
Fixes the release action so that it uploads both the binary and the AppImage. This is how it is done in projects such as melonDS where they provide both the binary (often labelled Ubuntu) and the AppImage.
