Creating new Elastic documents for every change event instead of overwriting previous elastic document

Hello, i have finally created a POC for CDC but when i make a change on an object, instead of creating a new elastic document, it overwrites the previous one hence working like database replication. Instead i want for every change, a new elastic document to be created. Is there an easy way to configure pgsync in this manner? Thank you for this awesome project!
